Grandma’s Easy Polish Pierogi (Perogies) Recipe

If you are a fan of pierogies, then this is a
great recipe for making at home and enjoying after a long day. The best part
about this recipe is that you do not need any special equipment like a food
processor to make. You can even make them by hand, without the convenience of
our Machika Dough Press. The only ingredients you will need are:
2 cups all-purpose flour
1 teaspoon of salt
½ cup of sour cream
½ tablespoon baking powder
1 tablespoon of butter
1 tablespoon of vegetable oil
4-5 baked potatoes
¾ cup of cheddar cheese (shredded)
Salt & pepper
Dash of onion powder
2 tablespoons of butter
(soften, room temperature)
Optional – One tablespoon
of cheese sauce

Making Pierogies Dough
Combine your dry ingredients in a large bowl.
In another bowl, mix your eggs, butter, oil, sour cream, by whisking together thoroughly.
Combine your wet ingredients with your dry ingredients and combine.
Fold dough over on itself until the texture is consistent throughout.
Cover and let sit at room temperature for about 30 minutes. You can store the dough overnight, so you can prepare your dough ahead of time.
Making Pierogies Filling
Pierogies filling is easy to make, all you need to do to start is boil your potatoes until completely soft. They should break apart easily. You will need to mash them when done.
Drain and mash potatoes and add your shredded cheese and sauce.
Season to taste with freshly cracked black pepper and salt.
Throw in a dash of onion powder. Be conservative with the amount added to not overwhelm the filling with onion flavor.
Assembling your Polish Pierogies Recipe
1. If you have a Machika Dough Press, then making your perogies is quick and easy. Simple pick the size of dough press you want and then flatten your dough on a floured surface.
Cut your dough into perfect circles using your dough press.
Flip the press over and lay out your circular dough across the crimped edges.
Add about 2 tablespoons of potato filling per pierogi. This recipe makes about 16 servings.
Close the dough press to seal the pierogi. If pierogi has trouble sealing, add a little bit of water around the edges before pressing. If you do not have a Machika Dough Press, you can make also make perogies by hand.
Lay out your perogies on a baking sheet and pan. Freeze and then boil in a slightly salted pot of water.
Boil one at a time. When the pierogi starts floating, you can remove from the water with a draining spoon.
